A gourmet dining experience at sea
Michel’s consultancy with Celebrity Cruises began in the 1980s, after he successfully catered a 750-guest family wedding for the shipping tycoon’s sister.
This meal so impressed John Chandris that he decided Michel could probably apply that same engineering precision to boats and cruises. Even before one ship had been built, he asked Michel to become a consultant, advising on the layout and selecting the equipment for the galleys. Michel created and regularly updated the award-winning menus, developed the wine list and assisted the training of executive restaurant staff.
The result was easily on par with many of the finest restaurants on land. After an association of more than 12 years, that one ship grew into a fleet of seven, all monitored by Michel to evaluate the quality and performance of the entire culinary operation. He was on board for over 100 cruises!
