An Asian adventure
When Michel was invited to open his own restaurant at the Intercontinental Hotel in Danang, he relished the challenge of bringing haute-cuisine to Vietnam.
Opening in December 2012, La Maison 1888 was the beginning of an exceptional gastronomic journey that lasted three years, culminating in his passing on the reins in June 2015. Michel’s mission was to introduce his own particular brand of French high-gastronomy – as illustrated by 30 years of three Michelin stars – to the most luxurious new resort in Vietnam.
Day after day, he taught and transmitted his passion to his eager Vietnamese team, not leaving them until the young chefs were comfortable cooking French cuisine and the waiters had perfected the excellence of service à la Française. Perhaps he has trained someone now who will become a master chef and help turn Vietnam into the world’s kitchen… who knows?
